My husband and I enjoy an occasional crisp side meat treat. Not so this evening. The side meat would not crisp, but instead burned and smoked up my house. The smoke sent me and my husband into coughing fits and lung tightness. I have been cooking for 50 years and have on occasion burned something but the smoke has NEVER AFFECTED US IN THIS MANNER. I suspect an overdose of sodium nitrite became airborne and caused the coughing and lung tightness.. 45 minutes later, we are still suffering. I will not purchase any more Clifty Farms meats.
I received my Ham and it was very good ! 6-8 Pound spirial ham ! And I had too freezer it because it was old before I could use it ! I still have it in the freezer ! But went bad fast !
not over salted like some hams,it is tasty and made just right
My grandparents had a totally self sufficient farm in SW Kentucky. When I say self sufficient I mean with everything you needed to live including hogs and a smoke house. I was taught from a young age how to select and prepare a proper country ham. You and I know a real ham doesnt fell off the hog spiral cut and honey glazed. After receiving your 15.5 lb whole country ham I soaked it over night in my grandmothers secret soak , this morning I washed it and prepared it for the oven and placed it in her old broiler, then after 5 hours I am proud to have one of the best hams I have ever tasted ready to share with family this Thanksgiving.!!! I am hooked on Clifty Farms, than you for your old fashioned curing.
